Beers.
(06)
Six beers on tap all year and in cans to go. Every one is poured at the bar before it goes into a can.
One brew day,
from grain to glass.
Head brewer Maya Okafor brews twice a week on a 15-barrel system. A lager takes ten weeks from this morning to your pint; a hazy takes about two.

6 AM
Mash in
Two thousand pounds of Michigan malt meet 160°F water in the mash tun.

9 AM
The boil
The wort boils for an hour. Bittering hops go in at the start, aroma hops at the end.

11 AM
Hop stand
Whole-cone Michigan hops steep for 30 minutes while the kettle cools down.

Now
1 PM
